Ingredients

    1 1/2 quarts water
    1 1/2 pounds ham hocks or(turkey parts, fat back,smoked neck bones, mostly any type of seasoning fat will do). I like smoked
    4-5 pounds collard greens, rinsed and
    trimmed
    1/2 pack thick hickory smoked bacon (Fried and drained) keep all drippings for later use.
    2 cans chicken broth
    1/2 teaspoon seasoned salt(optional)
    1 tablespoon crushed red pepper flakes
    (optional)
    1/4 cup fat from cooked and drained bacon or (vegetable oil)
    garlic to taste
    salt and pepper to taste

Directions

Directions:
1. Place the water and the ham hock in a large pot with a tight-fitting lid. Bring to a boil. Lower the heat to very low and simmer covered for 1.5 hours
2. Add the collards, the hot pepper flakes, chicken broth, garlic, and (seasoned salt) to pot. Simmer covered for about 2 hours, stirring occasionally.
3. Add the bacon fat or vegetable oil and simmer covered for 30-40 minutes. Keep collards tossed at his point. Most of the juices should be absorbed.

Remember too cook more than a serving of this dish to freeze and have for later.
