Introduction

Ingredients

½ box whole wheat penne
½ red onion, slivered and drizzled in balsamic vinegar and molasses
6 strawberries, quartered then halved
approximately 1/4 cup chopped cashews
.66oz basil, roughly chopped
1/3 c balsamic vinegar
1/6 c oil
½ tsp paprika
¼ tsp pepper
pinch oregano
1 oz molasses
4oz feta or goat cheese (depending on your taste)
Directions
Cook whole wheat penne according to instructions on box. While cooking, thinly slice half an onion, drizzle lightly with balsamic vinegar and molasses until brownish, and cover and let sit. Drain pasta and allow to cool.
Slice strawberries into quarters, then cut quarters in half if desired (I found this helped the distribution).
Dry-toast roughly chopped cashews in oven at 325 for 5 minutes on foil or cookie sheet.
Chop basil roughly and set aside.
Combine balsamic vinegar, oil, paprika, black pepper, oregano, and molasses.
Combine pasta, onion, strawberries, cashews, cheese, and balsamic mixture in a large bowl. Best if allowed to sit overnight to let pasta soak up vinegar. Add basil when ready to serve.
Serving Size: Makes about 8 half cup servings
