    2 Tbps butter
    2 Tbsp rice flour
    10 oz skim milk
    2 Tbsp Cream Cheese
    1/4 c shredded cheddar cheese
    1/8 c grated Parmesan cheese
    2 Tbsp Marsala cooking wine
    2 tsp minced garlic
    12 oz chicken breast (boneless without skin, cubed
    1-2 cups broccoil, in bite sized pieces
    1-2 c cauliflower, in bite sized pieces
    6 mushroom quartered


Melt butter. Add flour to make a roux. Once it is lightly browned slowly whisk in milk. After about 10 minutes, remove from heat and add all cheeses, wine and garlic. Stir until smooth. (if too thick ad small amounts of water to bet cheese sauce consistency)

Season chicken with salt and pepper. Brown in non-stick skillet. Add chicken and vegetables to sauce. Pour into med casserole dish. COver and bake 20-30 minutes until sauce is bubbly and vegetables are tender.
