Introduction
Delicious high protein, high fiber muffin to grab and go! It also makes a great quick bread. I modified this from the recipe on the back of a bag of chia seeds I got awhile ago. My husband calls these our "seedy" muffins, our preferred alternative to the seed rolls at Whole Foods. These are more dense, contain a lot more seeds and fiber, and are moist, not chewy. Ingredients

- 2 cups of whole grain flour
- 1 cup of yellow cornmeal
- 3 tbsp of ground flax
- 1 tsp of baking soda
- 1 tsp of salt
- 14 oz of water
- 1/3 cup of chia seeds
- 1/3 cup of golden flax seeds
- 1/3 cup of unsalted sunflower seeds, kernel only
- 1/2 cup of unsalted pumpkin seeds, kernel only
- 1/4 cup of honey or agave
Tips
Can substitute ground flax + water with equivalent volume of milk, if preferred, but it will raise the calories.
Directions
Preheat oven to 350 degrees. Mix flour, cornmeal, soda, and salt well. Add water, stir until well blended. Add seeds and honey. Mix thoroughly. Pour into greased muffin tin or bread pan. Makes 12 huge muffins or a large loaf of quick bread. Bake muffins for 20-25 minutes, bread for 35-45 minutes depending on your oven and altitude. Toothpick or knife will come out clean when done and the tops will be a lovely golden brown!
