Introduction

Delicious, slightly sweet Summer salad, perfect as a side dish for BBQs and picnics since there's no dairy! Delicious, slightly sweet Summer salad, perfect as a side dish for BBQs and picnics since there's no dairy!
Number of Servings: 12

Ingredients

    4 cups shelled edamame
    3 cups whole kernel corn
    1 cup dried cranberries, like Craisins
    1 packet Good Seasons salad dressing (any Italian variety)
    1/4 cup Splenda granules

Tips

Can also sub halved grape or cherry tomatoes for the cranberries.


Directions

Prepare edamame and corn per the package or allow to defrost fully. You don't want them fully cooked, still want the bite.

Combine all ingredients in large bowl, mix well and allow to chill in fridge 1-2 hours for flavors to mingle. Serve.
