Introduction

Number of Servings: 4

Ingredients

    1 tbls. olive oil
    3 cloves garlic, sliced
    3/4 cup onions, diced
    1 stalk celery, diced
    2 large carrots, sliced
    2 medium potatoes, cubed
    6 cups water
    1 bunch (8c.) kale
    1 can white beans, drained + rinsed
    1 tsp. salt
    1/2 tsp. black pepper

Directions

Saute garlic, onions, and celery in olive oil in large pot until translucent.
Add carrots and potatoes to pot.
Cover with water and add salt.
Bring to boil
Reduce to simmer for 20 minutes.
Add kale.
Simmer another 5 minutes.
Add white beans.
Heat through and serve.

Makes 4 generous 2.5-cup servings

    it needed more flavor...salt and peper alone was just not cutting it. I added some low sodium soy sauce (1/8th cup), teriyaki sauce (1/8th cup) and some white miso paste (1/4th cup).....mmmmm miso kale soup!!!! it is a five star fab now! - 1/4/09

    Very Good
    Skip the plain potato & add SWEET POTATO! Lots more flavor! Also added some garlic herb blend Mrs. Dash & about 10 cloves of garlic total. Finally, some cut up pieces of dried seaweed! Whacky but yummy! - 11/9/09
