Ingredients

2 eggs, beaten
2 c buttermilk
1/4 butter, melted
5 c rice flour or GF all purpose flour
1 c sugar
2 t baking soda
1 t baking powder
2 t salt
2 t xanthan gum
1 t nutmeg
1/2 t cinnamon
For Glaze
3/4 c powdered sugar
1/4 c water
Directions
Beat 2 eggs, buttermilk, and melted butter in a large bowl with a whisk.
Combine dry ingredients in a separate bowl. Fold slowly into the wet ingredients, mixing by hand with a wooden spoon. When ingredients are mostly combined, use your hands to knead a few times to make sure the ingredients are fully incorporated.
Let the dough rest for 15 minutes. Sprinkle extra rice flour on your countertop or a large cutting board/pastry mat. Roll out dough to 1/4 inch thick. If dough is sticky, work in more rice flour blend.
Heat 2 inches of oil until hot (375 degrees).
Use a glass or biscuit cutter to cut disks out of dough. Use small glass or cap to cut hole.
Carefully place donuts into oil. Cook until brown on one side. Turn the donut over and brown on the second side. Donut holes can be fried as well.
Remove from oil and place on a plate lined with two layers of paper towel or brown paper (or use a cooling rack over a baking sheet). While warm, pour powdered sugar glaze over donuts. Serve warm.
