Introduction

Ingredients

    1 cup chopped raw onion
    1 tsp ground cumin
    1 tsp ground coriander
    1 Tbps canola oil
    1 bunch cilantro, chopped
    1 can black beans, rinsed and drained
    1/2 cup water
    juice of one lime
    1 chipotle pepper with adobo sauce
    1/4 tsp salt

Tips

Recipe will seem "soupy" but will thicken when refrigerated.


Directions

In a small saucepan, bring canola oil to a shimmer, then add onions, cumin, and coriander. Stir, then cover, reducing temp to just below medium. Cook covered 10 minutes, stirring every few minutes.

Meanwhile, chop cilantro and set aside. Put beans, water, lime juice, chipotle pepper, and salt into food processor.

When onions are transparent and soft, turn off heat and stir in cilantro. Add onion mixture to food processor.

Process until nearly smooth (will still look speckled). Store in refrigerator.

Serving Size: Makes 24 sandwich-spread size servings
