Ingredients

    1 egg, 2 Tbsp 100% Lemon Juice, 1/4 tsp sea salt, 1/4 tsp dry mustard, 1/4 cup +1 cup light tasting olive oil.

Tips

Egg and lemon juice need to be at ROOM TEMPERATURE, very, very important.


Directions

In a blender place egg and lemon juice together. Let them sit on the counter for 30-60 mins. Then add salt, mustard and 1/4 cup oil. Mix in blender for 30 seconds. Then S-L-O-W-L-Y drizzle/add in the rest of the olive oil through the pour hole in the lid of the blender. Do this last step very slowly, an emulsion will develop, creating the mayonnaise.

    Incredible!
    You can also make this in a food processor. Put egg, salt, mustard, lemon juice and 1 Tbl oil in bowl fitted with metal blade. Mix exactly 1 minute. Then add remaining oil through the holes in the food pusher! Automatically goes in slowly! If adding herbs, put in with egg at start. - 3/13/15
