Introduction

Ingredients

    Cream Cheese (8 oz)
    2 eggs
    1 tsp vanilla extract
    1/2 tsp baking soda
    2 TBL cake flour if on hand, otherwise regular flour will work.

Tips

Flour can be omitted for even fewer carbs, but the pancakes will be super flat & rubbery when cooled. In my opinion, the flour adds minimal carbs and the end result is much more satisfying.


Directions

Beat cream cheese & eggs until smooth, scraping bowl frequently. Add remaining ingredients & mix. Heat buttered skillet on medium. Drop approx 1/4 cup of batter onto heated pan. cover. Let "bake" approximately 3 minutes or until edges are dry & you are able to get a spatula under the pancake to flip. Flip over, cover & cook additional minute or so. These cakes brown easily. They puff up while cooking, but will deflate a bit when cooled. Serve with sugar free syrup.
