Ingredients

One 4 oz Tilapia fillet, fresh
No salt seasoning blend
Olive Oil drizzle (flavored is better - like garlic)
Lowfat sour cream (organic is best!)
Fresh spinach (bagged prewashed is easiest)
Tomato
Canned jalapenos
One can refried black beans
Black olives
Onions
White corn tortillas
Non-stick spray
Directions
Makes one serving
Preheat oven to 350.
Take fresh Tilapia, rinse with water and lay on square of foil (enough to wrap and cover). Drizzle a bit of flavored olive oil (plain is fine too, although you may want to add a bit of pressed garlic) and rub over fish. Sprinkle generously with seasoning and add a bit of salt. Wrap fish fillet in foil and place in preheated oven. Bake for about 15 minutes, and check for doneness. Careful not to overcook.
While fish bakes, chop tomatoes, onion, and black olives. Rinse spinach if necessary. Crack open can of jalapenos and refried black beans. Heat beans in microwave.
Heat small skillet to medium and lightly spray. Warm tortillas in pan until flexible and keep warm.
Slather refried beans onto each of the three tortillas. When fish is done, drain off any excess liquid. Break fillet up with fork. Add to tortilla and top with onions, tomatoes, and jalapenos (to taste!). Lightly salt. Add a dab of light sour cream to each and top with spinach. Voila!
Note: wonderful fresh tortillas make all the difference.
