Ingredients

    Egg, fresh, 4 large
    All Whites liquid egg whites - 1 cup
    Bacon grease - cooking fat - mbg, 2 Tbsp.
    Green Beans, fresh 3/4 cup
    Onions, raw, 1/3 cup chopped
    Mushrooms, fresh, 1/2 cup, slices
    Kale, 1 cup, cut into ribbons
    Dover Sole, cooked about 4 oz


Directions

Saute vegetables in bacon grease until softened. Add cooked fish, scramble well. Add eggs beaten with egg whites; cooke 3-4 minutes until bottom is partially set. Bake at 375 degrees about 30 minutes, until set and golden brown.
Serve hot.
