Introduction

Ingredients

1/4 cup butter
1 egg
1/2 cup erythritol and 1 dropper plain stevia
1 cup almond flour
3/4 cup vanilla whey protein
1/2 tsp sea salt
1/2 tsp baking soda
1/4 tsp cinnamon
1/2 tsp vanilla extract
Directions
In a large bowl cream the butter and sweetener together until very smooth.
Then add the egg and mix until well combined. Add in remaining ingredients and mix until well combined. Form into a tight ball, then press slightly flat (like a giant cookie) and chill in the fridge.
Preheat oven to 325 degrees F. Place the dough in between 2 pieces of plastic wrap or parchment paper. Roll the dough out into about 1/4" thick. Cut the dough with Christmas cookie cutters, and place onto a lightly greased baking sheet.
Bake the cookies for 7 minutes, or until light brown. Then turn off the oven and leave the cookies in for an additional 5 minutes, this will create a crispier cookie. Set the cookies out to cool and top with your favorite frosting!
