Introduction

Ingredients

    Fried Apples:

    3 medium apples; washed, cored, and cut into thin slices (we like to leave the peels on, it's up to you)
    1/8 c. margarine or butter
    1/8 c. Splenda
    1/8 c. light brown sugar; unpacked
    1 tsp. cinnamon

    French Toast:

    6 slices whole wheat bread
    1 cup skim milk
    1 egg
    1/4 c. egg substitute
    1 tsp. cinnamon
    1 tsp. vanilla extract
    1 tsp. Splenda
    Cooking spray
    3 tsp. margarine or butter; divided
    Sugar-free maple syrup (optional)

Directions

Begin with the apples. Melt margarine or butter over medium-low heat in a large skillet. Add apples. Sprinkle Splenda, brown sugar and cinnamon over apples and stir to coat. Cook on low for 3-4 minutes until apples beging to tender, then turn heat to low and cook additional 10 minutes, stirring ocassionally, until apples are soft and syrup has thickened.

While apples are cooking, heat another large skillet on medium-low heat. Spray liberally with cooking spray. Whisk together milk, egg, egg substitute, cinnamon, vanilla and Splenda for the french toast into a pie plate. Dip bread slices quickly (do not soak) on both sides into egg mixture, transfer directly into hot skillet. Cook slices on each side until browned and slightly crisp, or about 4-5 minutes per side. If you cannot fit all the slices into one skillet, be sure to respray the skillet liberally before putting your second round in.

Take two slices of toast and spread each with 1/2 teaspon of margarine or butter. Then top both slices with 1/3 of the apples. Add sugar-free maple syrup if desired (1/8 cup sugar-free maple syrup is included in the nutrtional facts).

Makes three servings of two slices of toast, and approximately 2/3 cup of apples each.
