Introduction

Ingredients

6 cups water
3 cups cornmeal
1 cup sugar
2 large eggs
1-2 cups flour
Tips
We have a family of 9 and this is usually two breakfasts or a breakfast and a dinner side dish. Some people bake the Johnny Cake mix in a loaf pan then slice it and fry it which is good too!
Directions
First make Cornmeal Mush: Mix water, cornmeal and sugar in large pot, bring to boil stirring constantly. Allow to simmer until thickened, serve like oatmeal with syrup and milk if desired.
Then make Johnny Cakes: With the left over mush, add two eggs (tempering if the mush is warm still) and the flour until real thick. Drop into the frying pan with a hot 1/2 inch of oil and pat the cakes flat with the back of the spoon, brown on both sides, add oil as needed. Serve with pancake syrup or fruit sauces.
