Introduction
Made with spelt & rice flour! Made with spelt & rice flour!Number of Servings: 18
Ingredients

2C Spelt White flour
1/2 C White Rice flour
1/4 C packed brown sugar
1/2 C Raw Sugar (Turbino)
3-1/2 teaspoons of baking powder
1 teaspoon of salt (I prefer using Kosher)
3 tablespoons of Canola oil
1/3 C Soy Lowfat Vanilla Soymilk or (Skim milk OK)
1-1/4 C mashed banana (about 3 medium, the riper, the better!)
1 egg or equivalent of Egg Beaters
To save time, double recipe and freeze a loaf!
Directions
Spray bottom only of 9x5x3 loaf pan or 2 if doubling recipe. (I use glass) Pre0heat your oven to 350 degrees.
Mix all ingredients in a large bowl, then beat with electric beaters for approx. 45 seconds. Pour into pan(s). Bake until a wood toothpick pushed through top center comes out clean - check at 60 minutes as ovens will vary! Once baked, remove pans to a wire rack; run a knife around all sides and carefully turn upside down to remove from pan(s). May store in refrigerator for up to one week in a Ziploc gallon bag or in the freezer in a Ziploc Freezer gallon bag. Freezes well, so to save time I double my recipe and bake both at the same time.
9" pan makes 18 - 1/2" slices
