Introduction

My wife and I was starting a low carb./low calorie diet and was warned that it might cause constipation so I was looking for a recipe make over to add fiber to. This worked well . . . we loved the Pancakes and Muffins. Just a slight orange taste and sugar free surup easy/healthy breakfast! Ingredients

    Whole Wheat Flour, 1.25 cup
    Baking Soda, 1 tsp
    *Sucralose (like Splenda), 2 tsp
    Milk, 1%, 1 cup
    Egg, fresh, 1 large
    Vanilla Extract, 1 tbsp
    Equate Fiber Therapy, (Orange) 3 tbsp

Tips

We made 2 pancakes a piece for my wife and I, the batter had thicken so I added a little more milk. 1/4 cup of almonds. Placed rest of batter in cup cake wraps and made Muffins for latter.


Directions

Mix flour, baking soda, and splenda Fiber Therapy in bowl. Add Vanilla, egg milk stir with wisk Serving size is 1/3 cup mix. Use PAM on skillet when cooking and sweeten with sugar free syrup and/or fruit!

Serving Size: Makes 10 1/3 cup servings. ie:4 pancakes 6 muffins
