Ingredients

    -3.5 cups grated zucchini
    -1 cup corn
    -1.5 cups grated carrot
    -1 cup finely chopped or grated onion
    -1.5 cups lite cheese (I used a mix of romano, lite cheddar and parmesan)
    -6 med eggs (lightly beaten)
    -0.5 cup skim milk
    -dash of salt & pepper to taste
    -2 cups wholemeal flour
    -spray of olive oil spray (to grease dish only)

Tips

Can add ham for extra flavour and change up vegies


Directions

- Preheat oven to 180 degrees.
-After preping and grating ingredients. Lightly beat eggs.
-Place all ingredients into large bown and mix together
- lightly grease 2x 20cm baking dishes with spray oil, pour mix into dishes and place in oven for approx 50 mins or until golden and knife comes out clean
