Qunioa w/ kale and butternut squash Qunioa w/ kale and butternut squash
Number of Servings: 6

Ingredients

    4 garlic cloves, chopped
    1 butternut squash, about 3 pounds in weight, peeled and cut into 1/2 inch cubes
    1 cup quinoa
    1 1/2 cup kale (approximately)
    2 tablespoons apple cider wine vinegar
    1 teaspoon basil
    1/2 teaspoons thyme, dried
    1 tsp parsley, dried
    1/4 cup vegetable broth
    Salt/pepper to taste

Directions

Preheat oven to 375 degrees Fahrenheit.
Add all ingredients to a deep baking pan, mixing together well and place in oven for 30- minutes, stirring at the 15 minute mark and reduce heat to 325. Bake covered the remaining time.
