Introduction

Tastes better than normal pancakes. Lovely served with a warm berry sauce. Tastes better than normal pancakes. Lovely served with a warm berry sauce.
Number of Servings: 6

Ingredients

    Ingredients:

    1 cup almond meal
    2 eggs
1/4 cup water (for puffier pancakes, you can use sparkling water)
    2 T oil
    1/4 teaspoon salt
    1 T sweetener

Tips

Each 1/4 cup serving contains about 7 grams of usable carbohydrate, 4 grams of fiber, and lots of antioxidants.
Yield: Six 4-inch pancakes

Directions

Preparation:
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.
Serve with sugar-free maple syrup, sugar free berry sauce, or other low carb topping.

Serving Size: Makes 6 x 4 inch pancakes

I made this but without the 2 T. of oil. I wasn't sure what it would add to the recipe besides more fat, which there is plenty of with the almond meal. A nice treat for my grain-free eating plan! - 7/21/15
