Just like creamed spinach from a steakhouse. Great with a cut of lean beef. Ingredients

1/2 lb. frozen chopped spinach
1 lb. frozen cauliflower
1 1/2 tbsp. unsalted butter
20-25 frozen pearl onions
3/4 1% milk
1/4 cup reduced fat cream cheese
1/3 grated parmesean cheese
1 tsp garlic powder
1 tsp onion powder
salt and pepper to taste
2 tbsp. fresh parsley
Directions
Place frozen spinach and cauliflower in a large sauce pan with 1 c. water. Allow to steam until cauliflower is tender (10-12 min). Drain vegetables. While vegetables are draining, melt butter in sauce pan and add pearl onions. Give the pan a swirl to coat the onions. Return spinach and cauliflower to the pan.
Add milk and mash with a potato masher until vegetables are consistency of a chunky mashed potato. Bring to a simmer and allow liquids to reduce (about 5 minutes).
Add salt, pepper, and onion and garlic powder. Stir in cream cheese and parmesean cheese. Allow to cook 1-2 minutes more.
Serve with fresh parsley on top.
