Introduction

Ingredients

    12 cups chicken stock
    1 cup green pepper sliced
    1 cup red pepper sliced
    2 cups yellow peppers sliced
    2 boneless skinless chicken breast, cooked
    2 thighs, no skin and boned, cooked
    2 drumsticks, no skin and boned, cooked
    1 Tbsp. cumin
    2 cups frozen yellow corn
    2 cups black beans
    5 chopped roma tomatoes
    2 cups chopped onion
    1 tsp ground red pepper (more or less, to your liking)

Directions

Chop cooked chicken, set aside. In a large pot, combine stock, vegetable and spices. Cook until soft. Add chicken. Simmer over low heat for 30 minutes to incorporate flavors. Serve with the following toppings:

low-fat sour cream
low-fat shredded cheese
chopped cilantro
crispy strips of fried tortillas
salsa
