A creamy, fibre-filled salad A creamy, fibre-filled salad
Number of Servings: 2

Ingredients

    1 cup canned green beans (drained)
    1 medium tomato (diced)
    1 TBL low calorie mayonaise
    1 teaspoon thyme
    dash freshly ground black pepper

Directions

Drain canned green beans well (should be approx one cup/can) and empty into a medium size bowl. Pat dry with paper towel is desired.

Chop or dice one medium size tomato. Add to green beans.

Stir in 1/2 tablespoon* low calorie mayonaise.

Season to taste with thyme and freshly ground black pepper.

Stir well. This can be eaten immediately or allowed to sit in refrigerator to let flovours blend.

*an extra 1/2 tablespoon low calorie can be added if an extra creamy salad is prefered. The calorie count is for a salad using a full tablespoon.

    Very Good
    Very similar to my (altered) recipe but I add finely minced onion. Let stand in fridge for a while so onion can permiate the beans. Add bacon bits if desired. - 11/16/09

    Incredible!
    I thought this was an excellent side dish with low calories and low fat. I too like ruth used miracle whip light. I'll defiantly be making this one again - 3/16/07

    Very Good
    I used Miracle Whip light instead of mayo because that's what I had and 2 Tbsp instead of one. It was very good!! I'm sure mayo would give it some extra yummy zip. - 3/15/07
