Ingredients

    3 cups cooked, diced Chicken breast
    10 oz pkg frozen chopped Spinach, thawed, drained well
    1 small Onion
    1 small Bell Pepper
    1 Tbs Olive oil
    8 oz Cream Cheese, softened
    1/3 cup Sour Cream
    10 oz can crushed diced tomatoes, drained
    8 oz Cheddar Cheese
    1/4 tsp Cumin
    1/2 tsp Chili Powder
    1/2 tsp Garlic Salt
    Salt and Pepper to taste

Directions

1. Saute Peppers and Onions in Olive OIl until opague.
2. Mix all ingredients except cheddar cheese in bowl until mixed well.
3. Pour into a greased 2 1/2 quart casserole dish.
4. Sprinkle with shredded Cheddar Cheese.
5. Bake at 350 degrees for 40-50 minutes or until heated through and bubbly.
