This is an easy, low fat, crowd pleaser This is an easy, low fat, crowd pleaser
Number of Servings: 6

Ingredients

    1 cup long grain rice
    2/3 cup orzo pasta or 1 cup broken vermicelli
    1 1/2 cups chicken broth
    1 cup water
    1 tablespoon buttter


Directions

Melt butter in 2 quart pan. Add pasta to butter and stir until browned. Add rice and remove from heat; mix thoroughly. When well mixed, add broth and water. Bring to a boil, then lower heat , cover and simmer 20-22 minutes until all water is absorbed and rice is soft. Turn heat off and let set a few minutes. Stir from bottom, fluff. then serve.

    Nice and simple rice pilaf. I substituted extra virgin olive oil for the butter and would love to try adding some carrots and bell peppers next time to throw in some veggies. - 12/8/08
