Introduction

Ingredients

1 Pie Crust (pre- or homemade)
4 Sweet Potatoes, baked
1 c. Milk (I used unsweetened soy)
2 TB Honey
1/3 c. Maple Syrup
2 TB Cornstarch
1/2 tsp. Cinnamon (or to taste)
1/4 tsp. Ginger (or small piece whole root, to taste)
Directions
Bake sweet potatoes in 375 degree oven for 1 hour. Let cool and remove skins. Set aside.
Place potato skins in blender of food processor and add the remaining ingredients. Blend until smooth.
In a bowl, mash sweet potatoes with the milk and potato skins concoction until well blended.
Put into prepared pie crust and bake at 375 for 45 min-1 hour or until toothpick comes out clean.

Made it in the toaster oven. I used decreased the soy milk and used some honey greek yogurt instead. Did not have any ginger so I used pumpkin pie spice to make up the spice amount used. The family loved it. I like how you add all the skin to the pie. I used my stick blender to smooth it out. - 11/23/10
