Ingredients

Whole Foods Gluten Free Bakehouse Sourdough Bread, 2 slices grated into breadcrumbs
    Ground beef, lean, 2.75 lbs
    Egg, fresh, 3 large
    Garlic powder, 2 tbsp
    Paprika, 5 tbsp
Pacific Natural Foods Beef Broth, 4 cups

Directions

Makes 8 servings (approx. 9 meatballs per serving)

Combine the beef, breadcrumbs, garlic powder, eggs and 3 tbsp paprika in a large bowl.

Mix by hand until all ingredients are combined evenly

Roll meat into balls approx. 1 inch around (one batch makes about 70 balls)

Cook the meatballs in batches in a stainless sauce pan over high heat, until firm. Remove from pan and place on paper towels to remove grease and cook remaining meat.

Pour grease out of pan and retun pan to stove.

Add cornstarch and paprika to pan. Mix with meat drippings and remaining fat in bottom of pan.

Add broth and deglaze pan. Return meat to mixture and cook, covered, over medium heat for 20 minutes, stirring occasionally, until broth thickens.

Serve with a dollop of sour cream (optional) plain or over noodles.
