Ingredients

    1, 17 gram box of Sugar Free Low Calorie Gelatin Dessert (I like lime, but any flavor will work)
    1 can Pineapple Tidbits 100% Pineapple juice, 1 cup Cottage Cheese, 2% Milkfat

Directions

Prepare gelatin with 2 cups of boiling water. Stir until the gelatin is completely dissolved. In a 2 cup (or larger) messuring cup put 2 cups of chopped or chrushed ice. Add the juice from the pineapple and enough cold water to the ice to measure 2 cups. Add to the dissolved gelatin and stir until the ice is all melted. Chill for about 20 minutes. Add the drained pineapple and cottage cheese and stir in. Chill for at least 1 hour before serving.

    Excited to see this! It is my one and only diet "go to" food. Whenever I crave, sweet, tart, creamy, I have a half cup of this salad and I'm good to go. I do add about 1/4 cup of chopped walnuts to the recipe to get the crunch factor. - 2/18/11
