Introduction

I love pancakes so much that for me, this is a recipe for one. However, you can split it between 2 people if you are feeling generous. I love pancakes so much that for me, this is a recipe for one. However, you can split it between 2 people if you are feeling generous.
Number of Servings: 1

Ingredients

    1/3 c Flour
    3/4 tsp baking soda
    1 tsp cocoa powder
    4 egg whites
    2 tbsp skim milk
    1/4 c blueberries

    For the Syrup:
    5 medium sized strawberries, sliced
    2 tbsp real maple syrup

Directions

Place strawberries and maple syrup in a small pot on medium heat, allow to come to a boil, and them simmer on low heat for 5-10 minutes until liquid is reduced.

For the pancakes, mix the dry ingredients together and then add the wet ingredients. Fold in blueberries.

set frying pan on medium heat and spray with pam. Spoon batter onto the pan and allow to cook for around a minute on each side.

Makes 8 small pancakes
