Number of Servings: 2

Ingredients

    16 oz can Garbanzo beans
    15 oz can Black beans
    1 diced red or yellow pepper
    2 chopped tomatoes (or can organic diced tomatoes drained)
    1/2 C chopped green onion
    1/2 C chopped celery
    1/4 C chopped cilantro
    1T Walnut (or olive) oil
    Juice of 1 lime
    1/2 tsp. Cumin Powder
    1 T Garlic Paste
    salt & pepper to taste

Directions

drain & rinse beans

add remaining ingredients & mix well

add salt * pepper to taste

serve over 1 cup salad greens of your choice

Serving Size: makes 2 servings - about 3 cups each
