Ingredients

    10 small eggplants 1 inch dice (4-5 cups when sauted)
    1.5 Tb olive oil
    3 Tb Tamari soy sauce
    2 Tb Oyster sauce
    4 Tb natural unsweetened creamy peanut butter
    1 Tb Rice Vinegar
    1 C chicken broth
    1 Tb minced ginger root
    1-2 Tb Hoisin sauce
    2 cloves garlic, minced
    Siracha to taste

Directions

Heat olive oil in skillet over medium heat. add eggplant and cook until soft, stirring occasionally
meanwhile mix all the other ingredients in a bowl when eggplant is soft add sauce and cook until sauce thickens, about 5 minutes.

Serving Size: makes about 6 one cup servings
