Introduction

Vegan Vegetable Soup Vegan Vegetable Soup

Ingredients

    I can organic black beans
    1/4 C red onion, chopped
    1 clove garlic, chopped
    1 C chopped fresh kale
    1 C chopped green beans
    10 baby carrots, sliced
    1/4 C green lentils
    1/2 cup whole wheat rigatoni
    1/2 tsp olive oil (for sautéing)
    1/2 T tumeric
    water
    salt and pepper to taste

Tips

Put the kale in a bit earlier if you prefer it to be soft.


Directions

Chop the garlic, onion, and carrots, and lightly sauté them in the olive oil. Add the turmeric as you sauté. Add black beans, and water, then bring to a boil. Add the lentils and whole wheat rigatoni, and reduce the heat to simmer. Add the kale and green beans, and let simmer for 18 minutes.

Serving Size: Makes approximately 6 one cup servings
