Ingredients

    Soba Noodles, 4 cup
    Edamame, frozen, prepared, 2 Cup
    Peas, frozen, 1 package (10 oz)
    *Smart Balance Omega Creamy Natural Peanut Butter, 5 tbsp
    Honey, 1 tbsp
    *Soy Sauce, 5 tbsp
    Sesame Oil, 1 1tsp
    Ginger, ground, 2 tsp
    Chili powder, 2 tsp
    Water, tap, add enough until consistency you prefer is reached

Tips

2 teaspoons of chili powder might be too spicy for some people, so start with 1 and adjust as necessary
fresh grated ginger would be good but I never seem to have that on hand when I decide to make something at the last minute that would require it


Directions

Sauce:
- add all ingredients except water in small saucepan, heat low to medium and stir until peanut butter is soft
- add water slowly until consistency is reached
Noodles and veggies:
- boil water
- add noodles, boil for a couple minutes
- add veggies, boil for a few more minutes until noodles are soft
- drain and then put noodles and veggies back in pot
- pour on sauce and stir
