Ingredients

    1 cup all-purpose flour
    1 tsp. baking soda
    1 tsp. salt
    1 cup wheat bran, toasted
    ½ cup dried mission figs, chopped
    ½ cup boiling water
    ¼ cup (½ stick) unsalted butter, room temperature
    ½ cup sugar
    ¼ cup honey
    1 egg (extra large), slightly beaten
    1 cup buttermilk
    ½ cup demerara (turbinado) sugar

Directions

Preheat oven to 400 degrees.

Line 12 muffin cups with paper liners. Stir flour, baking soda and salt in small bowl to blend. Combine bran and figs in another bowl; mix in 1/2 cup boiling water.

Beat butter and sugar in large bowl until creamy, and add honey and egg. Beat in buttermilk alternately with flour mixture in two additions each. Mix in bran mixture. Divide batter among lined muffin cups. Sprinkle with demerara sugar.

Bake muffins until tester inserted into center comes out clean, about 20 minutes. Turn muffins out onto racks and cool completely.

    One of the best low cal muffins I've tried. I substituted whole grain white flour and added some ground flax seed to up the nutrition even more. - 2/6/09

    Incredible!
    Super-moist, sweet and delicious! I substituted canola oil for butter, which made the muffins fall apart somewhat, but it was mouth-watering. Sprinkling sugar on top made a nice crust. I used Sucanat instead of demerara sugar. - 4/14/08
