Spicy, creamy, cheesy... not healthy. Next time I'm adding half the butter and fat free milk. This is my mother-in-law's recipe and my husband just LOVES this stuff. Ingredients

    Butter, salted, 4 tbsp (remove)
    Cream Cheese, 4 oz (remove)
    Whole Milk / Vitamin D, 0.125 cup (remove)
    Aldi's Fit & Active Shredded Sharp Cheddar Cheese - 1/4 cup (28g/1 oz)/serving, 2 serving (remove)
    *Aldi's Happy Harvest Whole Kernal Sweet Corn - 1/2 cup (120g) 3.5 servings per can, 3.5 serving (remove)
    Jalapeno Peppers, 1 pepper (remove)

Tips

I made this verbatim to my MIL's recipe (except I used low fat cheese) but... The next time I make this, I'm using low fat everything AND halving the amount of butter and reducing the amount of cheese. It's soooo decadent, you can slim this down a bit to cut back on the calories. Good luck only eating on serving!


Directions

Dice jalapenos. Drain and rinse corn. Combine milk, cream cheese and butter in a bowl and microwave for 30 second intervals, stirring each time, until smooth. Cover corn in cheese mixture, stir in jalapenos, until evenly coated. Add cheese on top and bake about 30 min. until golden brown and bubbly. Mmmmm.

Serving Size: Makes 4 large servings. Try not to eat the entire dish.
