Number of Servings: 20

Ingredients

    1 cup each:
    Pecan pieces
    Pineapple, chunks or cubes
    Mandarin oranges, in juice not syrup
    Shredded coconut, unsweetened
    Mini marshmallows
    Bananas, sliced

    2 cups cooked rice, chilled
    3 cups of whipped cream

Tips

Use real whipping cream without added sugar. Use brown rice for a healthier version.


Directions

1. Drain the oranges (and the pineapple if not using fresh).
2. Combine all ingredients except the whipped cream and mix well.
3. Fold in the whipped cream.
4. Chill and serve.
