Ingredients

    -1 box of Near East Whole Grain Blends Wheat Couscous, roasted garlic and olive oil flavored and prepared per package directions.
    -1/2 pound chicken tenderloins, seasoned with salt, pepper, paprika and rosemary, baked and cut into bite sized pieces
    -1/2 c. canned black beans
    - 3 oz. marinated artichoke hearts, diced
    - 15 kalamata olives, diced
    - 5 sundried tomatoes, diced
    - 24 grape tomatoes, halved
    - 1 c. shredded part skim mozzerella
    - 2 cups baby spinach or kale (optional)

Tips

I like to serve this over a bed of greens, preferable spinach or kale.


Directions

Once all ingredients that need to be cooked are complete, simply combine everything together and let chill for at least 3 hours before serving.
