Ingredients

    Broccoli, fresh, 1.5 cup, chopped or diced
    Tomato, grape (3oz = appro 12 tomatoes), 3 oz
    Onions, raw, 1 cup, chopped
    carrot shreds, 1 serving
    Egg, fresh, whole, raw, 11 large
    Silk Almond Milk Original Light, 1 cup
    Mozzarella Cheese, part skim milk, 5 oz
    1 TBSP Olive Oil
    Salt & Pepper to taste

Tips

Season with Rosemary, Garlic, Thyme and basil for great flavorings!


Directions

Saute all vegetable in 1 TBSP olive oil
Whip eggs and milk (almond milk) together with salt and pepper to taste
Place in 375 degree oven for approximately 20 min
sprinkle cheese on top - cover to let cheese melt.
Serve warm
May be reheated for breakfast (or lunch!)
