Introduction

Great tasting healthy salad, that is easy to make. I make a batch once a week. It will last all week. Great tasting healthy salad, that is easy to make. I make a batch once a week. It will last all week.

Ingredients

    1 cup cooked quinoa
    8 cups finely shredded Kale
    1 ripe avocado diced
    4 oz walnuts
    4 oz dried cranberries
    1 Tbsp extra virgin olive oil
    1 Tbsp rice vinegar
    fresh lemon to taste


Tips

The only essential ingredients are the Kale, Quinoa and Rice Vinegar. Everything else is up to your taste. I sometimes add a few flax seeds for extra omega 3s


Directions

In large bowl mix all ingredients
