Ingredients

    3 large peppers
    2 large tomatoes
    200 gr portabella tails
    1/2 onion
    1 tbsp safflower oil
    basil, garlic, salt, pepper, pepper flakes - spices
    water

Tips

Serve with brown rice, quinoa or some other grain. Or bread. Add sour cream or Greek yogurt if desired.


Directions

saute onions in 1 tbsp of oil, add peppers and some water. Cover and let it cook for 10 mins, add mushrooms cook for another 20 mins, add tomatoes and spices (season to taste) cook till tomatoes get cooked and most of the water/juices are gone. Last 10 min cook uncovered.
