Ingredients
-
1 Medium White Onion, diced
3-4 Cloves Garlic, diced
1 lb Super Lean Ground Beef
1/2-teaspoon dried oregano*
1/2-tablespoon dried parsley*
1/2-teaspoon ground celery seed*
Fresh ground pepper (2-3 seconds)*
1/2-teaspoon cayenne pepper*
1 teaspoon extra-virgin olive oil*
1 Knorr Vegetable Bullion Cube
2 Cups Water
1/2 Bunch Green Swiss Chard, rough chopped
1-2 Cups Fresh Baby Spinach
15 oz. Can White Beans, partially drained (do not rinse)
Optional: Fresh-grated Parmesan cheese for garnish.
*Spice measurements are approximates.
Directions
Prep all vegetables and set aside. Next, combine onion and garlic in 3 qt or larger pot. Cook on medium-high for approx. 2-3 minutes, until onion starts to soften. Add in ground beef and salt, stirring to break up large chunks. As beef begins to brown, add in oregano, parsley, celery seed, ground pepper and cayenne. Cook mixture until beef is medium to well done (about 8-10 minutes). Add in olive oil. Combine bullion cube with 2 cups hot water, add to beef mixture. Next add in green chard. Reduce heat to medium, allow to simmer for 3-4 minutes before adding in spinach. Allow greens to cook an additional 2-4 minutes before adding in white beans. Cook for an additional 5-8 minutes on medium-low to heat beans through. Remove from heat and serve with optional Parmesan cheese garnish. Makes about 4 servings. Can feed more if served over egg noodles.
