Ingredients

    Sweet Potato no skin, 12 oz
    Extra Virgin Olive Oil, 2 tbsp
    Cinnamon, ground, 1 tsp
    Turmeric, ground, 1 tsp
    Garlic powder, 1 tsp

Tips

The turmeric is essential in an anti-cancer diet. But it needs fat in order to be better absorbed by the body, hence the addition of olive oil. Could also use butter instead of Olive Oil.


Directions

Peel the Sweet Potatoes and cut into chunks (like you would for making mashed white potatoes) and boil in water that covers the potatoes by about 2 inches for approx 20 minutes or until tender.

Drain, mash, and add spices and serve hot.

Serving Size: Makes 12 2-tablespoon servings
