Ingredients

    2 cups of white rice
    non stick pan coating spray
    1 pound beef round steak -cut into cubes
    1/4 cup chicken or beef broth
    mexican seasoning
    1 bell pepper cut into strips
    1 cup onion cut into strips
    2 roma style tomatoes cut into wedges
    1 can pinto beans

Directions

prepare rice according to directions.
apply non stick skillet with pan coating spray. add beef and cook for 3 to 4 minutes or until almost completely cooked. add broth, seasoning and vegetables to meat and cook another 2-3 minutes or until vegatables are tender..heat pinto beans and serve with rice and picado.
