Ingredients

    6 Cups Butternut Squash - cubed
    4 cups Carrots (or baby carrots) -- sliced
    1.75 cups chopped Onion
    1 Quart Imagine No-Chicken Broth -- Low Sodium
    1 QUart Imagine Vegetable Broth -- Low Sodium
    1/2 cup Half & Half
    1 TB Nutmeg
    2 tsp White Pepper
    2 TBS Earth Balance Spread

Directions

Melt Earth balance in a pot. Cook Onions for 2-3 minutes... add the Squash and Carrots and cook for an additional 4-6 minutes.

Add Broths... bring to a boil then bring down to a simmer for 35-45 minutes until the vegetables are very soft.

Using an immersion blender, blend until desired smoothness.

Add Half and Half and spices. and stir well.
