Ingredients

1 onion, chopped
1 clove of garlic, chopped
675 g (1.5 lbs) carrots, sliced
900 ml (1.5 pints / 4 cups) vegetable stock
Salt and freshly ground black pepper
1-2 tablespoons fresh coriander (cilantro), chopped
1 tablespoon (15 ml) olive oil
Tips
The blender liquidizes the soup well.
2 TBSP fresh cilantro is approximately 5 grams.

Directions
1. Place the onion, garlic and carrots in a large saucepan. Add the stock and bring to the boil, then reduce the heat and simmer for 15 minutes until the carrots are tender.
2. Season with the salt, freshly ground black pepper and add the fresh coriander and olive oil.
3. Liquidize in a blender or food processor.
