Satisfying, rich cheesy soup for under 275 calories per 2 cup serving. Goes together fast and easy. I tried this out on a bunch of guys on a cold, rainy day they'd been out in, and they loved it! Ingredients

    4 cups water
    2 cups fresh broccoli florets
    2 cups cauliflower florets
    4 cups fat free half & half
    1/4 cup Promise Margarine, original
    1/2 cup all purpose flour
    2 cups 95% lean (or better) ham, cubed
    2 teaspoons Mrs. Dash Garlic & Herb Seasoning Blend
    Salt & pepper to taste

Directions

Bring water to a boil in a medium sized sauce pan. Add broccoli and cauliflower. Boil until vegetables are tender. Drain liquid.


Meanwhile, in a larger pot, melt margarine. Whisk in the flour and cook over medium heat until no lumps remain.


Stir in half-and-half and add cheese. Continue to stir until cheese is melted and mixture begins to thicken.


Add diced ham and cook just until ham is heated through. Add vegetable mixture and serve while hot.


Makes 10 2-cup servings.


Nutritional values include 1 teaspoon of salt. Omit the salt and reduce sodium by 618 mg.


Use Promise Light instead of the original and cut 28 calories and 2.4 grams of fat per serving.


Omit the ham and cut 35.3 calories, 1.3 grams of fat, and 5.2 grams of protein.

    I haven't made this, but I see the directions say "add cheese", but there isn't cheese listed in the ingredients???? How much cheese is needed? - 5/16/08
