Ingredients

    2 Egg Whites, 1 Yolk
    1/4 cup Flour
    1/4 cup Milk 2% optional (your choice)
    .25 tsp imitation vanilla flavor
    1/4 tsp butter for non stick pan

    Strawberry filling:
    1 T cream cheese
    1/4 C or 4 T Homemade Strawberry Jelly

Tips

Use whatever filling you like, I used only what I had on hand to fulfil my craving. Delicious! Will make again. I will freeze whatever Crepes are left (if any) for easy meal in future. I bet these could be filled and frozen and thawed overnight or in lunchbox for quick easy "on the run breakfasts" Will definitely try this out. I will use my own Crepe recipe with different fillings, fresh fruit, could use for veggies and egg breakfast with or without meat roll ups. optional vanilla flavor. Use Imagination.


Directions

Mixed all ingredients together till smooth (I used immersion blender)
Non stick pan pre-heated on medium heat, add butter, pour small thin crepe mixture, spread rolling pan till crepe is round and thin, when edges and bottom are lightly browned flip, cook till light brown, done. Make several depending on size. Fill with mixture of cream cheese and home canned strawberries, roll up, fold, or not...delicious!!
