Introduction

A basic Mexican / Southwest flavored three-bean salad A basic Mexican / Southwest flavored three-bean salad
Number of Servings: 14

Ingredients

    1 can black beans
    1 can red beans (kidney, or small)
    1 can cannellini beans
    10oz frozen corn

    1/2 to 1 cup diced bell pepper(s), preferably red, yellow, orange
    1/2 medium yellow onion, diced, or one scallion

    1/2 cup cilantro, chopped

    Dressing:
    1/4 cup olive oil
    1/4 cup red wine vinegar
    1-2 tsp salt
    2 tsp sugar
    1/2 tsp ground pepper
    1/2 tsp cumin
    1/4 tsp cayenne
    1/2 tsp chili powder
    1 Tbsp lemon juice
    1 Tbsp lime juice

Directions

Combine beans, corn, pepper, onion, and cilantro in bowl

Combine dressing ingredients and blend (whisk, shake, blender)

Pour over salad and combine with spoon

Cover and refrigerate overnight for flavors to blend

Serving Size: Makes 14 1/2 cup servings
