1 large field cucumber
1/4 cup chopped shallot
1/4 cup extra virgin olive oil
1/2 cup white balsamic vinegar
1/4 cup sugar
1/4 cup water
150 grams cracker barrel feta cheese with oregano, sun dried tomato and black pepper
