Introduction

Not having found bulgur at my small town grocery store, I went with a house favorite, barley, as the grain and used fresh and locally grown vegetables. Ingredients

    3 cups quick barley, prepared
    2 cups or more fresh parsley, chopped
    1/4 cup fresh chives, chopped
    1-2 sprigs mint, chopped
    1 large tomato, diced fine
    1 large cucumber, diced fine
    2 tbsp red wine vinegar
    2 1/2 tbsp Extra Virgin Olive Oil
    1 tsp kosher salt

Tips

Herbs chop to a nice, fine consistency when pulsed in a food processor. For the best flavor, use vegetables that are in season or even garden-grown where available.


Directions

Prepare barley without salt and drain if necessary. Chop herbs and dice vegetables. Combine all ingredients in a large bowl, toss well, and serve cold.
